    Dry Red Wine

    Grindstone’s second wine to be released was our Cabernet Sauvignon.  Everyone loves a great Cabernet on a special occasion, an evening out or even on a weeknight. We think you will be very pleased with our first stand alone varietal.  Like our Cortina Red Blend, we are proud of the fact that all the grapes are grown on our ranch in the foothills of the Pacific Coast Range in Colusa County.

    We thought highly of our Cabernet Sauvignon fruit in the Valley View Vineyard. The vineyard planted in 2000, is at its highest, 150 feet higher than the Chamisal Creek Vineyard. The name Valley View Vineyard speaks for itself.  The fertile Sacramento Valley lays out below the vineyard.  The Sutter Buttes, Mt. Lassen and even Mt. Shasta are visible from the top of the vineyard.  Gravelly loam soils make the vines work to provide intense and balanced fruit.

    The Grindstone Cabernet Sauvignon is that rich, balanced wine that you’ve been waiting to spend an evening with.

    This full-bodied, cellar-worthy Cabernet Sauvignon emanates with penetrating bouquets of roses, lush black currant, and earthy, terroir notes that are fitting for the rich soil of Chamisal Creek. These effervescent aromas are but a prelude to elegant flavors of blackberry, espresso, vanilla, cassis and black pepper. Bursting with nuance and a dry yet delicate personality, this wine will only continue to get better with age.

    Beef Tri-Tip, seasoned with garlic and thyme, accompanied by savory sweet potatoes, roasted bell peppers, and enjoyed with a mouthwatering chimichurri sauce.

    Lamb Chops dusted with fresh rosemary leaves and a pinch of cayenne pepper, drizzled with a blackberry-black pepper sauce, and complemented by grilled asparagus and California-grown wild rice.

    Mature Gouda and Cheddar cheeses with rounded taste and a sharp savory flavor. Blackberry Souffle with Molten Chocolate Filling.

  • Cortina Red 2013
    Dry Red Wine

    Cortina Red was our very first wine that we made.  It is a blend of Cabernet Sauvignon, Syrah and Petit Verdot. For our Cortina Red Blend we are proud of the fact that all the grapes are grown on our ranch in the foothills of the Pacific Coast Range in Colusa County.

    The Syrah grapes come from our Chamisal Creek vineyard in the lower part of the ranch. The vineyard was planted in 1997. The clone of Syrah  we planted is the Shiraz clone that is widely used in Australia. Chamisal Creek Vineyard is both bordered and planted around century old valley oaks giving the vineyard rich character and history.

    The Cabernet Sauvignon and Petit Verdot grapes are sourced from our Valley View Vineyard. Combining the fruit from these two vineyards seemed like the logical first step when planning our first wine offering.  The Cabernet Sauvignon is the character rich base of the wine with the Petit Verdot and Syrah adding balance and drinkability in that order.

    We are happy to announce the release of our 2013 Cortina Red. This meritage blend of 46% Cabernet Sauvignon, 27% Petit Verdot and 27% Syrah has complex notes of pomegranate, coffee & tart cherry. This is a well balanced wine with expressive notes of dark chocolate truffle and cinnamon.

    Chimichurri rubbed roast lamb, with polenta and shaved brussel sprouts with a balsamic drizzle

    Braised chicken, roasted garlic mashed potatoes and spring greens with a house made spicy ranch dressing

    Or, a Chili verde pork stew topped with sliced avocado and sour cream served with a side of grilled summer vegetables.

  • Cortina Red 2012
    Dry Red Wine

    This classical Meritage blend of 50% Cabernet Sauvignon, 30% Syrah, and Petit Verdot is full of baked black currants and deep cassis aromas. Hints of cinnamon, red jam, black tea, plum, and dark chocolate consume the palate, while layers of complex, full-bodied flavors lend to a silky tannic finish. This blend is a savory classic that stands the test of time, all the while, capturing the spirit of Chamisal Creek.

    Roasted duck, with Cortina red-chocolate sauce and roasted beets, served beside California grown wild rice salad with shitake mushrooms.

    Penne pasta, with honey-cured bacon, swiss chard, jack cheese and pecans and served under a creamy, white vodka sauce.

    Blackberry and Raspberry swirl cheesecake.

  • Cortina Red 2011
    Dry Red Wine

     

     

    This classic Meritage blend of 50% Cabernet Sauvignon, 30% Syrah and 20% Petit Verdot is a medium bodied wine with concentrated fruit notes throughout. At first sip hints of blackberry and coffee give way to notes of dark cherry with a mocha profile. Smooth texture and a clean finish is the hallmark of this wine. This is our first vintage, a wine we are proud to call Cortina Red.

    Pairs well with hearty beef dishes; Braised ox-tail on a crisp Autumn evening served with Sacramento Valley medium grain rice pilaf

    Slow roasted lamb shanks with garlic mashed potatoes and a side of grilled artichokes served with lemon aioli.

    Texas sheetcake with cinnamon and our favorite home made vanilla ice cream made in a White Mountain freezer
