MAKE SWEET WINES
One of the tricks of the trade, used by the Doherty family, is harvesting grapes at night while they are cool. In fact, the portion of their crop used for the Grindstone label is quickly loaded into a refrigerated truck, shipped to Del Rio Vineyards, and arrives by noon. Cooler grape temperatures allow the winemaker more control over the fermenting process resulting in a more stable and sweeter grape.
